For this recipe, you'll want to dig out your grater and a small scooper. It'll make the preparation process go a lot easier! The zucchini and farm fresh eggs are both available in our market!

Ingredients
  • 1 medium zucchini
  • 2 eggs
  • ¼ cup panko bread crumbs
  • ¼ cup regular bread crumbs
  • ¾ tsp garlic powder
  • 1 cup shredded cheddar cheese
  • Salt and pepper
  • Marinara sauce
Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment or spray with cooking spray.
  2. Grate the zucchini into a clean dish towel. Wrap the towel up and squeeze out as much liquid as possible.
  3. In a large bowl, stir together the zucchini, eggs, panko, bread crumbs, salt, pepper, garlic powder, and cheese.
  4. Scoop by rounded spoonfuls onto the prepared baking sheet. Bake until golden brown (approx. 20-25 minutes).
  5. Serve warm with marinara sauce for dipping.

 

Baked Parmesan Zucchini Rounds
 
Sometimes you have to add some cheese to convince the family to eat their vegetables...this is a fun recipe you can use to do this!

Ingredients
  • 2 medium-sized zucchini
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper
Instructions
  1. Place oven rack in center position of oven. Preheat to 425 degrees. Line a baking sheet with foil (lightly misted with cooking spray) OR parchment paper.
  2. Wash and dry zucchini, and cut into ¼" thick slices.
  3. Arrange zucchini rounds on prepared pan, with little to no space between them. If desired, lightly sprinkle zucchini with salt and freshly ground black pepper. Use a small spoon to spread a thin layer of Parmesan cheese on each slice of zucchini.
  4. Bake until Parmesan turns a light golden brown (approx. 15-20 minutes).
  5. Watch these closely the first time you make them and pull them out of the oven early if the Parmesan is golden before 15 minutes!

 

Zucchini Quiche

Ingredients
  • 2 lbs zucchini
  • 2 cups shredded cheddar cheese
  • 2 eggs
  • 1½ cup milk
  • Salt and pepper
Instructions
  1. Heat the oven to 375 degrees.
  2. Thinly slice the zucchini using a sharp knife.
  3. Sprinkle salt all over the zucchini slices, toss thoroughly with your fingers and let sit for 20-30 minutes.
  4. Place the zucchini slices in a cheese cloth or and give it a good squeeze to take out all the moisture.
  5. In a mixing bowl, lightly beat the eggs with the milk. Season with salt and pepper.
  6. Stir in 1 cup shredded cheese.
  7. In a quiche pan, arrange half of the drained zucchini slices and sprinkle ½ cup cheese on top of them.
  8. Arrange a second layer of zucchini slices and pour the milk mixture over them.
  9. Finish the quiche with the remaining ½ cup shredded cheddar cheese.
  10. Bake the zucchini quiche in the hot oven until set and the top of the quiche is golden brown (approx. 50-60 minutes).
  11. Remove from the oven and serve either warm or cold.
