Amish Potato Salad

We used to drive all the way to Pennsylvania to pick up quarts of this salad - now we make something similar right at home! This salad has a little tart to it from the vinegar but is really a great side to any BBQ or sandwich.

Ingredients
  • 1 lb potatoes; peeled boiled and cut into cubes
  • 2 hard boiled eggs
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp yellow mustard
  • ¼ cup sugar
  • 1 tsp vinegar
  • Salt and pepper
Instructions
  1. Place potatoes and chopped hard boiled egg whites in a large bowl.
  2. In a small bowl, combine mayonnaise, hard boiled eggs yolks, sour cream, mustard, sugar, vinegar, salt and pepper. Mix well.
  3. Pour over potatoes and and gently stir until thoroughly coated.
  4. Refrigerate until cooled before serving (approx. 30 minutes).

 

Pizza Potatoes

This is a combination of potato skins and mini pizzas - SO easy to make and a big hit with kids who want a quick snack.

Ingredients
  • 3 large potatoes
  • 1 can spaghetti sauce
  • 2 cups mozzarella cheese
  • Pepperoni
Instructions
  1. Microwave potatoes until tender (approx. 12-15 minutes).
  2. Slice the potatoes in half lengthwise, scoop a small well into the center of the potato, sprinkle lightly with salt, then scoop a spoonful of spaghetti sauce on top of the potato.
  3. Sprinkle some cheese on top of the sauce.
  4. Place a few pepperoni on top of the cheese, then transfer to a cookie sheet.
  5. Bake in an oven preheated to 400 degrees until the cheese is melted and bubbly (approx. 15 minutes).
  6. Allow to cool slightly before serving.

 

Au Gratin Potatoes

Reserve this recipe for your dinner guests who love cheese because these potatoes are CHEESY! Don't expect any leftovers - these will go fast!

Ingredients
  • 3 tbsp butter
  • 3 tbs[ all-purpose flour
  • 1-1/2 tsp salt
  • ⅛ tsp pepper
  • 2 cups 2% milk
  • 1 cup shredded cheddar cheese
  • 5 cups thinly sliced peeled potatoes (about 6 medium)
  • ½ cup chopped onion
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened (approx. 2 minutes).
  3. Remove from heat; stir in cheese until melted. Add potatoes and onion.
  4. Transfer to a greased 2-qt. baking dish. Cover and bake 1 hour. Uncover; bake until the potatoes are tender (approx. 30-40 minutes).
