Cucumber, Tomato and Feta Salad

What’s better than Jersey Fresh cucumbers and tomatoes? Both of them in the same recipe! Swing by and pick up tomatoes and cucumbers from the market to make this yummy salad recipe. Ingredients
  • 2 lb cucumbers
  • 2 large tomatoes
  • 1 bunch scallions, chopped
  • 1 cup black olives, halved
  • 1 7-oz package feta, crumbled
  • 1/2 cup coarsely chopped fresh mint
  • 6 tbsp extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • Salt and pepper
Instructions
  1. Combine cucumbers, tomatoes, scallions, olives, half of the package of feta, and mint in a large bowl.
  2. Whisk oil and lemon juice in a small bowl; season dressing with salt and pepper.
  3. Pour dressing over salad; toss to coat.
  4. Season to taste with salt and pepper. Sprinkle remaining half of feta over and serve.

Ingredients
  • 8 oz uncooked penne pasta
  • 1 tbsp canola oil
  • 2 medium cucumbers, thinly sliced
  • 1 medium onion, thinly sliced
  • 1-1/2 cups sugar
  • 1 cup water
  • 3/4 cup white vinegar
  • 1 tbsp prepared mustard
  • 1 tbsp dried parsley flakes
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic salt
Instructions
  1. Cook pasta according to package directions; drain and rinse in cold water.
  2. Place pasta in a large bowl; stir in the oil, cucumbers and onion.
  3. In a small bowl, whisk the remaining ingredients. Pour over salad; toss to coat.
  4. Cover and chill for 4 hours, stirring occasionally.

Ingredients
  • ½ pickling cucumber, thinly sliced
  • 1 small onion, thinly sliced
  • 2 jalapeños, thinly sliced
  • 4 large dill sprigs
  • 2 tbsp coriander seeds
  • 2 tbsp mustard seeds
  • 2 tsp celery salt
  • 2 cups distilled white vinegar
  • 1 cup sugar
  • 2 tbsp kosher salt
Instructions
  1. Pack cucumber, onion, jalapeños, dill sprigs, coriander seeds, mustard seeds, and celery salt into a large jar.
  2. Bring vinegar, sugar, and salt to a boil in a medium saucepan, stirring to dissolve sugar and salt.
  3. Pour hot mixture into jar, carefully, filling all the way to the top.
  4. Seal jar and chill at least 12 hours and up to 1 week.
