Beets are the standout flavor in this salad mixture sure to satisfy your hunger and your taste buds. Ingredients
  • 2 hard boiled eggs
  • 1-2 medium sized beets, cooked
  • 1 yellow pepper, chopped
  • 2 handfuls of mixed lettuce, washed and drained
  • Handful of walnuts, halved
  • Salt to taste
  • 1/3 cup greek yogurt
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp horseradish
  • 2 tbsp fresh lemon juice
Instructions
  1. Mix the greek yogurt, dill, horseradish, and fresh lemon juice to make the dressing.
  2. Boil the eggs.
  3. Place the lettuce on a plate.
  4. Mix the beets and peppers and add to the salad mixture.
  5. Cut the eggs into halves and place on the beets mix with the walnuts.
  6. Top with the dressing and serve immediately.

Everyone has an opinion on colseslaw: some love it, some hate it. Regardless, there’s lots of great ingredients in a traditional coleslaw recipe that you can swing by and pick up right in our market, including cabbage, carrots and honey![br][br][url href=”undefined”][img src=”https://vonthunfarms.com/wp-content/uploads/2018/05/coleslaw-300×225.jpg” width=”300″ height=”225″ class=”alignleft size-medium” title=”coleslaw”][/url]
Ingredients
  • 1 cup mayonnaise
  • 1½ tablespoon apple cider vinegar
  • 1 tablespoon honey
  • ¾ teaspoon celery seeds
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ medium green cabbage, very thinly sliced (about 4 cups)
  • ½ medium red cabbage, very thinly sliced (about 4 cups)
  • 2 medium carrots, peeled and grated
Instructions
  1. Whisk mayonnaise, vinegar, honey, celery seeds, salt, and pepper in a large bowl.
  2. Add green and red cabbage and carrots to dressing and toss to coat.
  3. Cover and chill until ready to serve.

 

VonThun’s Homemade Apple Pie

The thing about apple pie is…everyone loves it! We choose to use store bought crust … it’s just as good, and easier than home made! The difference in our apple pie is that we use a variety of apples – some that are a little more tart, some a little more sweet. And, we pack the pie plate FULL of apples to make a nice, tall pie. Ingredients
  • 2 pie crusts
  • 10-12 thinly sliced, peeled apples
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 3/4 teaspoon cinnamon
  • a pinch of salt
Instructions
  1. Heat oven to 425 degrees. Place pie crust in a pie plate. Press firmly against the side and bottom.
  2. In a large bowl, add apples and dry ingredients and mix until all apple slices have a generous coating.
  3. Add filling to pie crust.
  4. Cover with additional pie crust & crimp the top & bottom crust edges together.
  5. Make vent holes throughout the top crust with a fork.
  6. Once in the oven, put a tin foil tent loosely over the pie to prevent burned crust.
  7. Put a piece of tin foil under the pie as well, to catch any drippings.
  8. Bake for 45 minutes – 1 hour.
