Our family loves holidays – aside from getting the chance to spend quality time with each other, we know that the holidays mean Grandma is making beets! Even the non-vegetable lovers get a scoop or two of these to complete their holiday spread.[br][br][url href=”undefined”][img src=”https://vonthunfarms.com/wp-content/uploads/2018/04/14494404770_e8f0756b91_b-300×199.jpg” width=”300″ height=”199″ class=”alignleft size-medium” title=”14494404770_e8f0756b91_b”][/url]
Ingredients
  • 2-3 large beets
  • 1/4 cup cider vinegar
  • 1/4 yellow onion
  • 1 Tbsp sugar
  • 1 Tbsp olive oil
  • Salt and pepper
Instructions
  1. Remove green tops & root bottom from beets. Scrub the beets free of any dirt.
  2. Place the beets in a medium saucepan and cover with water by about an inch. Bring to a boil on high heat then lower the heat and maintain a simmer for 35 to 45 minutes, depending on the size of the beets, until they are easily pierced with the tines of a fork.
  3. Drain the beets and rinse them in cold water. Use your fingers to slip the peels off of the beets. The peels should come off easily. Discard the peels.
  4. Quarter or slice the beets.
  5. Chop 1/2 yellow onion into 1 – 2″ pieces and add to beets.
  6. Make the vinaigrette by combining the cider vinegar, sugar and olive oil. Whisk ingredients together with a fork.
  7. Adjust to taste. Add salt and pepper to taste.
  8. Combine beets and vinaigrette in a bowl and allow to marinate for a half hour at room temperature.

Ingredients
  • 2 heads fresh broccoli
  • 1 red onion
  • 1/2 pound bacon
  • 3/4 cup raisins
  • 3/4 cup sliced almonds
  • 1 cup mayonnaise
  • 1/2 cup white sugar
  • 2 tablespoons white wine vinegar
Instructions
  1. Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  2. Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
  3. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

 

Farmhouse Apple Crumb Pie

Guaranteed to be the quickest, simplest, most delicious pie you’ve ever made! We choose to use store bought crust … it’s just as good, and easier than home made! The difference in our apple pie is that we use a variety of apples – some that are a little more tart, some a little more sweet. And, we pack the pie plate FULL of apples to make a nice, tall pie.
Ingredients
  • 1 pie crust
  • 10-12 thinly sliced, peeled apples
  • ½ cup sugar
  • 2 tablespoons all-purpose flour
  • ¾ teaspoon cinnamon
  • a pinch of salt
  • 1 bag Betty Crocker oatmeal cookie mix
  • 1 stick of softened butter
Instructions
  1. Heat oven to 425 degrees. Place pie crust in 9-inch glass pie plate. Press firmly against the side and bottom.
  2. In a large bowl, add apples and dry ingredients and mix until all apple slices have a generous coating.
  3. Add filling to pie crust.
  4. Mix the cookie mix and butter with a fork to make crumbs.
  5. Sprinkle crumbs on top of the apples.
  6. Once in the oven, put a tin foil tent loosely over the pie to prevent burned crust.
  7. Put a piece of tin foil under the pie as well, to catch any drippings.
  8. Bake for 45 minutes – 1 hour.
