Pasta with Broccoli, Roasted Peppers and Sausage

This recipe is borrowed from the Farmers Against Hunger cookbook. Try to use small pasta with a shape that will "catch" all the chunky pieces of sausage and the vegetables. This is a very fresh-tasting dish without the heaviness of a marinara or creamy cheese sauce.
Ingredients
  • 1 lb of small, shaped pasta
  • 4 oz sweet Italian sausage, with the casing removed
  • 9 garlic cloves, minced
  • 1 cup roasted red peppers
  • 1 large head of broccoli with florets and stems cut into small, bite-size pieces
  • ½ cup of water
  • 1 tbsp extra virgin olive oil
  • 1 cup of grated Parmesan
  • Salt and pepper
Instructions
  1. Bring a large pot of water to a boil and cook according to instructions on the package. Drain and return the pasta to the dry pot.
  2. As the pasta cooks, cook the sausage in a large skillet over medium-high heat until browned (approx. 5 minutes).
  3. Stir in the garlic and red peppers, ½ tsp of salt and a pinch of pepper. Cook for approx. 2 minutes while stirring, covered.
  4. Turn heat to high, add the water and broccoli to the skillet and cook until broccoli looks bright green (approx. 1-2 minutes).
  5. Uncover the skillet. Cook for additional 3-5 minutes more.
  6. Once the water has evaporated and the broccoli is tender, dump the mixture into the pot with the pasta and add cheese and the oil. Toss together and serve.

 

Fresh Broccoli Salad

This salad uses an interesting combination of fruits, vegetables and meats Feel free to add an extra head of broccoli for extra crunch.

Ingredients
  • 2 heads fresh broccoli
  • 1 red onion
  • ½ pound bacon
  • ¾ cup raisins
  • ¾ cup sliced almonds
  • 1 cup mayonnaise
  • ½ cup white sugar
  • 2 tablespoons white wine vinegar
Instructions
  1. Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  2. Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
  3. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

We brought this to a family BBQ recently - people could not stop gushing about how delicious it was! Our family isn't big on mayo, but we didn't mind it one bit in this recipe!

Ingredients
  • 8 cups of fresh broccoli cut into bite sized pieces
  • ½ red onion , cut into thin bite sized slices
  • ½ lb bacon, cooked and crumbled
  • ¾ cup raisins or craisins
  • ¾ cup sliced almonds
  • 4 oz. cheddar cheese, cubed
  • 1 cup mayonnaise
  • ½ cup white sugar
  • 3 tbsp red wine vinegar
  • Salt and pepper
Instructions
  1. Combine broccoli with the red onion, raisins, almonds, and cheese in a large bowl.
  2. To make the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad.
  3. Let salad chill for about 3 hours.This allows the flavors to meld.
  4. Add the bacon at the end to keep it crisp. Season with salt and pepper and serve.
