Baked Sweet Potato Fries

Baked Sweet Potato Fries

Ingredients
  • Olive oil
  • 5 sweet potatoes, peeled and sliced into french fry slices (1/4" width and length)
  • ½ teaspoon paprika
  • ¼ cup garlic powder
  • Salt and pepper
Instructions
  1. Preheat oven to 450 degrees.
  2. Line a sheet tray with parchment.
  3. In a large bowl toss sweet potatoes with just enough oil to coat.
  4. Combine 1 cup salt, ¼ cup pepper and ¼ cup garlic powder to make house seasoning.
  5. Sprinkle the potatoes with house seasoning and paprika.
  6. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally (approx. 20 minutes).
  7. Let cool 5 to 10 minutes before serving.

 

Sweet Potato Pie

We know there are some die hard, will-only-eat-sweet-potato-pie fans out there, so this recipe is for you! If you have a family pie crust recipe, feel free to prepare that but the recipe below calls for store-bought pie crust to make the baking a little easier.

Ingredients
  • 1⁄3 cup butter, softened
  • 1⁄2 cup sugar
  • 2 eggs, lightly beaten
  • 3⁄4 cups evaporated milk
  • 2 cups mashed sweet potatoes
  • 1 tsp vanilla extract
  • 1⁄2 tsp ground cinnamon
  • 1⁄2 tsp ground nutmeg
  • 1⁄4 tsp salt
  • Pie crust, room temperature
Instructions
  1. In a mixing bowl, cream butter and sugar. Add eggs; mix well.
  2. Add milk, mashed sweet potatoes, vanilla, cinnamon, nutmeg, and salt; mix well.
  3. Pour into pie shell.
  4. Bake at 425 degrees for 15 minutes.
  5. Reduce heat to 350 degrees; bake until toothpick comes out clean (approx. 35-40 more minutes).
  6. Cool; store in refrigerator.
