This is a pretty quirky appetizer that your family might question at first but we guarantee they’ll love the blend of flavors! Ingredients
  • Red or yellow watermelon
  • Feta cheese
  • Red onion
  • Basil
  • Balsamic vinaigrette
  • Walnuts
Instructions
  1. Slice the largest round of watermelon you can into triangle-shaped pieces.
  2. Top with sprinkles of feta, chopped red onion, torn basil, balsamic and a few walnuts.
  3. Eat just like pizza!

For this recipe, you’ll want to dig out your grater and a small scooper. It’ll make the preparation process go a lot easier! The zucchini and farm fresh eggs are both available in our market! Ingredients
  • 1 medium zucchini
  • 2 eggs
  • 1/4 cup panko bread crumbs
  • 1/4 cup regular bread crumbs
  • 3/4 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • Salt and pepper
  • Marinara sauce
Instructions
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment or spray with cooking spray.
  2. Grate the zucchini into a clean dish towel. Wrap the towel up and squeeze out as much liquid as possible.
  3. In a large bowl, stir together the zucchini, eggs, panko, bread crumbs, salt, pepper, garlic powder, and cheese.
  4. Scoop by rounded spoonfuls onto the prepared baking sheet. Bake until golden brown (approx. 20-25 minutes).
  5. Serve warm with marinara sauce for dipping.

 

Baked Parmesan Zucchini Rounds

  • 2 medium-sized zucchini
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper
Instructions
  1. Place oven rack in center position of oven. Preheat to 425 degrees. Line a baking sheet with foil (lightly misted with cooking spray) OR parchment paper.
  2. Wash and dry zucchini, and cut into 1/4″ thick slices.
  3. Arrange zucchini rounds on prepared pan, with little to no space between them. If desired, lightly sprinkle zucchini with salt and freshly ground black pepper. Use a small spoon to spread a thin layer of Parmesan cheese on each slice of zucchini.
  4. Bake until Parmesan turns a light golden brown (approx. 15-20 minutes).
