Ingredients
  • 2 cups diced cantaloupe (1/4 – 1/2″ cubes)
  • 1 cup diced cucumber (1/4 – 1/2″ cubes)
  • 1/2 cup finely chopped red onion
  • 1 hot pepper (stemmed, halved)
  • 1/2 cup roughly chopped cilantro
  • 3 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon kosher salt
Instructions
  1. Dice all of your ingredients and add to a medium mixing bowl.
  2. Best served immediately but still just as fresh up to 24 hours after combining.

Ingredients
  • 1 large bunch collard greens
  • 2 tbsp olive oil
  • 3 cloves minced garlic
  • 1/2 tsp red pepper flakes
  • Salt
  • Ground black pepper
  • 1/4 cup chicken broth
Instructions
  1. Wash the collard greens thoroughly. Remove the stems that run down the center.
  2. The tender young leaves in the heart of the collards don’t need to be stripped.
  3. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2″ thick slices.
  4. Heat a large saute pan over medium high heat and add the olive oil.
  5. Once hot, add the garlic and red pepper flakes and saute until fragrant.
  6. Add the collard greens, and saute until bright green (approx. 4 minutes).
  7. Season with salt and pepper. Stir in the chicken broth and cook until the liquid evaporates (approx. 2 minutes).

 

Bacon Onion Collard Greens

The flavors in this dish are amazingly simple but rich – bacon and onions. Adding red pepper gives it that additional kick that’ll make you wonder how many times a week you can make collard greens with dinner! Ingredients
  • 1 tsp pepper
  • 3 cups chicken broth
  • 1 pinch red pepper flakes
  • 1 lb fresh collard greens, cut into 2-inch pieces
  • 1 tbsp olive oil
  • 3 slices bacon
  • 1 large onion
  • 2 cloves garlic, minced
  • 1 tsp salt
Instructions
  1. Heat oil in a large pot over medium-high heat.
  2. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan.
  3. Add onion, and cook until tender (approx. 5 minutes). Add garlic, and cook until just fragrant.
  4. Add collard greens, and fry until they start to wilt.
  5. Pour in chicken broth, and season with salt, pepper, and red pepper flakes.
  6. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.
