This apple sauce is the perfect accompaniment to any meal. You can get 2-3 batches going at once in your crock pots and have plenty to jar and save for later! This is a great way to use older apples you’ve bought or picked – even if they are getting to be a little mushy. Still perfectly good to make sauce with! Ingredients
  • 6 pounds apples, peeled and sliced
  • 3/4 cup water per crock pot
  • cinnamon, if desired, to taste
Instructions
  1. Place the sliced apples and water in a crock pot. Cover and cook on “low” for 6-8 hours. As the apples cook down they will shrink and become fragrant.
  2. When the apples are soft (a fork will go right through them), mix with an electric beater.
  3. Add cinnamon if desired.
  4. Add more water if desired to make a thinner sauce. Mix less if a chunky sauce is desired.
  5. To can the applesauce, ladle it into mason jars, leaving 1/4 inch headspace before putting the lids on.
  6. Let cool completely and make sure the jars are sealed before storing in a cool dark place, like a pantry.

This recipe has a little magic in it. Instead of the traditional biscuit crust on a cobbler, you put a cake mix on the bottom of the pan and the blackberry filling on top. The cake then cooks to the top! Ingredients
  • 2 1/2 cup fresh blackberries, washed
  • 1 cup sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon Salt
  • 1 cup milk
  • 1/3 cup butter, melted
Instructions
  1. Stir together just the berries and sugar in a large bowl and let it sit for 25-30 minutes. [i]This will bring the juices of the blackberries so that they can be sweetened up by the sugar, this process is called macerating.[/i]
  2. Preheat the oven to 375º.
  3. Stir together the flour, baking powder, salt, and milk with a wooden spoon.
  4. Next, stir in the melted butter and hand-mix it until the ingredients are well incorporated and you have few clumps.
  5. Use a 8″x8″x2″ baking dish. Lightly grease the pan. Pour in the batter and smooth it out.
  6. Pour the macerated blackberries on top with all the sugar included and evenly distribute it over the batter.
  7. Bake for 45 minutes or until golden.
  8. Let it set up for 15 minutes and then serve with ice cream or whipping cream.

Rosemary Beet Chips

This recipe is for the healthy-eater looking for a crunchy snack alternative to chips. We all love something we can grab-and-go and feel healthy eating. This is it! Ingredients
  • 3 medium-large beets
  • Olive or canola oil
  • Sea salt and black pepper
  • 2-3 sprigs rosemary, roughly chopped
Instructions
  1. Preheat oven to 375 degrees F (190 C) and place oven rack in the center of the oven.
  2. Thinly slice beets with a sharp knife, getting them as consistently thin as possible. They should curl a little when cut. This will ensure even baking and crispiness.
  3. Add the beets to a large mixing bowl.
  4. Drizzle with olive oil and sprinkle on salt, pepper and rosemary. Toss to coat.
  5. Arrange in a single layer on two coated baking trays.
  6. Bake for 15-20 minutes or until crispy and slightly brown. Be sure to watch closely past the 15 minute mark as they can burn quickly.
  7. Remove from oven. Let cool. Then serve.
