Wine Glazed Radishes with Kohlrabi

A great dish that incorporates two of our earliest crops: kohlrabi and radishes! It has a great buttery taste that'll make you fall in love with cooking these crops.

Ingredients
  • 3 tbsp unsalted butter
  • 1 large bunch globe radishes (about 12), halved, plus leafy green tops for serving
  • 1 large or 2 small kohlrabies (about ¾ lb), peeled and cut into ½" wedges
  • 1 cup Lillet Blanc wine
  • Salt and pepper
Instructions
  1. Melt butter in a large skillet over medium-high. When it boils, reduce heat to medium; simmer until foamy.
  2. Continue cooking, stirring occasionally and scraping bottom of pan, until foam subsides, butter turns golden brown with a nutty aroma, and milk solids separate into brown specks that sink to bottom (approx. 2-7 minutes). Remove from heat.
  3. Add chopped radishes, kohlrabi, Lillet, and ¾ cup water. Generously season with salt and pepper. Boil, stirring occasionally, until vegetables are crisp-tender and liquid is reduced to a glaze that evenly coats vegetables (approx. 15 minutes).
  4. Transfer to a serving bowl; let cool 5 minutes. Toss with radish greens; serve.

 

Kohlrabi Slaw

Add this to a salad to give it an additional sweet kick or serve on a burger or sandwich. After you're done cutting the kohlrabi and apple into matchsticks, you just mix and it's ready to serve!

Ingredients
  • Kohlrabi, cut into matchsticks
  • Apple, cut into matchsticks
  • Olive oil
  • Fresh lemon juice
  • Salt and pepper
Instructions
  1. Mix kohlrabi and apple matchsticks (both peeled or not) with olive oil and fresh lemon juice. Season with salt and pepper.

 

Kohlrabi Chips

Similar to the beet and kale chips, these are a great grab and go snack to have on hand. They go great with all your favorite dips - just with a fraction of the calories of traditional chips!

Ingredients
  • Kohlrabi, unpeeled and thinly sliced
  • Olive oil
  • Salt
Instructions
  1. Chop kohlrabi and toss with olive oil. Season with salt.
  2. Arrange in a single layer on a baking sheet lined with a nonstick mat.
  3. Bake at 250 degrees, rotating sheet, until crisp and deep golden (approx. 35-60 minutes).
  4. Transfer chips as they're done to a paper-towel-lined plate. Season with salt.
