Tzatziki sauce is great on salads, chips, sandwiches – name it and you can probably add tzatziki to it! Ingredients
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
  • 1 clove garlic, grated
  • 1 tbsp fresh dill, chopped
  • 2 tbsp lemon juice
  • Salt and pepper
Instructions
  1. Mix ingredients in a small mixing bowl.
  2. Chill in refrigerator for an hour before serving.

Ingredients
  • 2 lb cucumbers
  • 2 large tomatoes
  • 1 bunch scallions, chopped
  • 1 cup black olives, halved
  • 1 7-oz package feta, crumbled
  • 1/2 cup coarsely chopped fresh mint
  • 6 tbsp extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • Salt and pepper
Instructions
  1. Combine cucumbers, tomatoes, scallions, olives, half of the package of feta, and mint in a large bowl.
  2. Whisk oil and lemon juice in a small bowl; season dressing with salt and pepper.
  3. Pour dressing over salad; toss to coat.
  4. Season to taste with salt and pepper. Sprinkle remaining half of feta over and serve.

Ingredients
  • 8 oz uncooked penne pasta
  • 1 tbsp canola oil
  • 2 medium cucumbers, thinly sliced
  • 1 medium onion, thinly sliced
  • 1-1/2 cups sugar
  • 1 cup water
  • 3/4 cup white vinegar
  • 1 tbsp prepared mustard
  • 1 tbsp dried parsley flakes
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic salt
Instructions
  1. Cook pasta according to package directions; drain and rinse in cold water.
  2. Place pasta in a large bowl; stir in the oil, cucumbers and onion.
  3. In a small bowl, whisk the remaining ingredients. Pour over salad; toss to coat.
  4. Cover and chill for 4 hours, stirring occasionally.
