Sweet Potato Pie

We know there are some die hard, will-only-eat-sweet-potato-pie fans out there, so this recipe is for you! If you have a family pie crust recipe, feel free to prepare that but the recipe below calls for store-bought pie crust to make the baking a little easier. Ingredients
- 1⁄3 cup butter, softened
- 1⁄2 cup sugar
- 2 eggs, lightly beaten
- 3⁄4 cups evaporated milk
- 2 cups mashed sweet potatoes
- 1 tsp vanilla extract
- 1⁄2 tsp ground cinnamon
- 1⁄2 tsp ground nutmeg
- 1⁄4 tsp salt
- Pie crust, room temperature
Instructions
- In a mixing bowl, cream butter and sugar. Add eggs; mix well.
- Add milk, mashed sweet potatoes, vanilla, cinnamon, nutmeg, and salt; mix well.
- Pour into pie shell.
- Bake at 425 degrees for 15 minutes.
- Reduce heat to 350 degrees; bake until toothpick comes out clean (approx. 35-40 more minutes).
- Cool; store in refrigerator.
