We know there are some die hard, will-only-eat-sweet-potato-pie fans out there, so this recipe is for you! If you have a family pie crust recipe, feel free to prepare that but the recipe below calls for store-bought pie crust to make the baking a little easier.
Ingredients
1⁄3 cup butter, softened
1⁄2 cup sugar
2 eggs, lightly beaten
3⁄4 cups evaporated milk
2 cups mashed sweet potatoes
1 tsp vanilla extract
1⁄2 tsp ground cinnamon
1⁄2 tsp ground nutmeg
1⁄4 tsp salt
Pie crust, room temperature
Instructions
In a mixing bowl, cream butter and sugar. Add eggs; mix well.
